Ever have those weekends where there is so much to do, you wonder how you will be able to food prep? That’s on my brain, between working Sunday and hoping to run all kinds of errands on Saturday. I knew this weekend was approaching, so what did I do? I saved several leftovers in the freezer. Two weeks ago I made extra chicken and broth, meat sauce and pulled pork. This is the week those awesome homemade dishes will be turned into fabulous new dishes! One thing I have perfected is how to turn leftovers into new meals.

The leftover meat sauce will become lasagna with homemade pasta and cheese. The leftover chicken and bone broth will become chicken corn chowder. The leftover pulled pork will become Cubans. The family will have Naan pizza bread for their sandwiches, while I have sweet potato toast. The SPT will be made this weekend, to make my week night meal easier,

The miso soup was such a hit, the kids wanted it again. This time it was paired with chicken and shrimp habachi. To be healthier, combine riced cauliflower and brown rice, add tons of sautéed veggies and shrimp. Yum!
